The Savoy Recycles Kitchen Oils into Biodiesel

Fairmont Hotels & Resorts will be introducing a new policy in their kitchens as part of an ongoing move towards sustainability.  The hotel company, known for its commitment to a greener world, will be implementing a waste disposal program that would consist of manufacturing used kitchen oils into biodiesel fuel.

22 different Fairmont locations are currently practicing the recycling of kitchen oil waste into biodiesel. London’s famous Fairmont hotel, The Savoy, sells used kitchen oil to one of the world’s leading biodiesel manufacturers.

Although the hotel itself is closed while undergoing a major remodel, the hotel’s popular Simpson’s-in-the-Strand restaurant is still open. Used cooking oil and wasted food is collected into different containers and then picked up by recycling management group PDM.

PDM currently collects the restaurants waste weekly, which is delivered to PDM’s biomass-to-energy power facility where the food waste is processed into biodiesel fuel. The hotel anticipates producing energy to power the daily electricity requirements of up to 10% of the guestrooms when they reopen in 2010.  This new procedure should help to reduce the hotel’s carbon footprint after reopening.

For nearly 20 years Fairmont Hotels has endeavored to reduce their carbon footprint upon the environment as part of its Green Partnership Program.  This new biodiesel program complements Fairmont’s announcement last year to personally combat climate change.  Along with The Savoy other Fairmont Hotel locations participating in oil conversion include The Fairmont San Francisco, The Fairmont Royal York, The Fairmont Miramar Hotel, The Fairmont Southampton, The Fairmont Newport Beach, The Fairmont Monte Carlo, Fairmont Mayakoba, Fairmont Château Laurier, The Fairmont Kea Lani, The Fairmont Vancouver Airport, Fairmont Le Montreux Palace, The Fairmont Empress, The Fairmont Chateau Lake Louise and The Fairmont Sonoma Mission Inn & Spa.
